Denver Anniversary weekend + Whole 30

Marriage is awesome.

Mainly when you’re with someone that supports & loves you in anything you do. Stetson is that person & I love living this crazy life along side him. Last weekend we went to Denver to have a little “get away” for our two year wedding anniversary. Someday I’ll make a post about our wedding day because it’s too long and probably way mushy for this post! [you’re welcome]

We have lived in Colorado for almost two years now and this is the first weekend we really spent exploring Denver & now I want to do it every weekend. We stayed downtown at Embassy Suites [thanks to uncle Dewayne, love you] and we had an exceptional stay.


Saturday we spent the day shopping then for our anniversary dinner we dined at Stoic & Genuine. If you’re ever visiting Denver and are looking for a nice seafood restaurant – GO HERE, it’s inside Union Station. They don’t take reservations but you can call ahead to get on the list. We just walked in and there was a table – fortunately! We ordered oysters for a starter – amazing. I know it sounds weird because we are in the middle of the US and no sea is near but they fly in everything & it’s soooo fresh.


Stetson ordered the Paella Moderna – besides his brother’s homemade Paella – It’s the best I’ve ever had. I ordered the Surf in Turf. YUP surf [IN] turf. NY strip wrapped ahi tuna – not your traditional surf n turf but I think I like it the IN way better! I mean both of our plates were so good I didn’t even get a picture. Then we walked around Union Station and downtown. Drank a whole lotta wine & talked until the wee hours of the night – it was so fun. Next morning, slightly [okay pretty] hungover we went to Just Be Kitchen for brunch. STOP. HERE. TOO. Guys it is very rare when I can find a restaurant that I can eat any item on the menu but this place is 100% gluten free & they have a Whole 30 menu. Oh and not to mention bottomless KOMBUCHA mimosas.


Speaking of Whole 30 – I’m taking the challenge once again! I’m feeling a good reset & I figured why not NOW?! Anyone wanna join me? I’ll be posting Whole 30 approved recipes all month long & giving you tips on how to survive it. I’m so excited to do this again & I’m better prepared this go around [which is so important]. If you are looking for a “cleanse” or “detox” – I recommend doing this instead, you wont go insane either because you get to eat real food. No calorie counting. No weighing every oz. No B.S.
