You know those days where you have so much to get done but the only thing you want to do is curl up in bed and watch Netflix all day?? Yea, that was me today. But I knew if I didn’t at least get something done, I was going to hate myself later. So I peeled myself out of bed, did a little meditation and yoga and was feeling more motivated. Every Friday morning I co-teach Hot Yoga at Cambio (you should totes come) with the amazing Corina Martin, if you need a relator – she’s your go to gal. Anyways this is a new adventure for both of us, we’ve practiced yoga for years but are new to teaching. As the weeks go on, we feel more comfortable than the last teaching, but this week it just felt like a shit-show to me on my part. I’m probably totally over thinking it but I just wasn’t in the right mind set today, and it sorta put me back in that crap of a mood I woke up in. Me knowing that going home and being a bum wasn’t going to fix anything, Corina and I decided to go to our favorite brunch spot, Peak Place and have our usual Chorizo hash (ding ding original inspo behind this featured recipe today!). Later in the day a new girl friend came over [pause, guys her stuff is amazing go check out her insta – Knotty Mess ] and we crafted and drank wine. Sometimes creating things is just like meditation to me, and it’s amazing.
I could literally live off of Sweet potatoes. Raw, mashed or fried…. gimmmeeee. But really if I’m at a restaurant and they have great sweet potato fries, they are an automatic winner in my book.
This recipe is a favorite of mine, ITS SO EASY. I cook it at least every other week and it makes the perfect breakfast meal prep (without the eggs). I’ve played around with the veggies and meats in this recipe but this is my favorite combo so far.
Oh and those brunch & craft dates turned my day around, that’s why friends are the best.

Sweet Potato Sausage Hash
- 1 box of Apple gate turkey sausage links – sliced
- 1 large sweet potato – diced
- 1 sweet yellow onion – diced
- 1 red bell pepper – diced
- 1 garlic clove – minced
- 2 tbsp coconut oil – split
- 1 tsp paprika
- 1 tsp pepper
- pinch of salt
Heat 1 tbsp of coconut oil in iron skillet over medium heat, add garlic & onion – cook for 5 mins.
Add bell peppers, sweet potatoes & 1 tbsp coconut oil – cook until potatoes are semi soft
Add sausage, paprika, pepper & salt – cook until potatoes are done & sausage is warmed
Serve Immediately or pack for breakfast prep for the week.
We fry an egg on top if we are eating it immediately & eat hard boiled eggs with it for meal prep!
