Trio tuscan potato & kale soup

Gluten-free, Dairy-free & Delicious. Oh and vegan option!

Yesterday morning we woke up to several inches of snow here in Colorado. FINALLY. Literally it’s been in the 50’s and hellooooo we live in Colorado & the best part is living near Pikes Peak when it has snow on it.

For those of you that don’t know I also work at Lululemon as an educator. They are such an amazing company. I was scheduled today to work and I’m so grateful they offered me to have a snow day from work today. It is honestly the best place I’ve work at. Ever.

So Stetson relaxed near the fire while I caught up on some much needed work. THEN I realized we had literally NO FOOD IN THE HOUSE. Sound the alarms!! If you’re like me when it’s cold out I immediately want soup or something temperature warm with spice. So I ventured out to the store, probably the worst decision ever. I haven’t made this soup in a hot minute and if you know me I never write down my concoctions for recipes that I make. Except now. Since I started this blog I realized I must start recording my kitchen must-haps.

I called it “trio” because there is three different meats in this soup. I know, crazy, but worth it! This soup would be perfect for my vegan friends- just swap white beans for your protein.
